Tick Tock Tea Loaf With Greek Style St Clement’s Yogurt - Tims Dairy

What you’ll need:

  • 75g currants
  • ½ tsp of bicarbonate of soda
  • 1 x Tick Tock Tea Original Rooibos Tea bag
  • 100g Tims Dairy NEW Greek style St Clement’s yogurt
  • Hot water
  • 200g wholemeal flour
  • 1 x tsp baking powder
  • A pinch of salt
  • Zest of one orange
  • 100g dark sugar
  • 150g butter
  • 2 eggs

How to do it:

1. Put the currants, ½ tsp bicarb of soda and a Tick Tock tea bag into a mixing bowl

2. Add hot water to cover

3. Leave for 30 mins

4. Line a loaf tin 20cm x 10cm x 7.5cm with parchment or greaseproof paper

5. Put the flour, baking powder, salt & zest into a bowl and gently mix together

6. Put the sugar, butter & eggs into an electric mixer bowl and mix into a batter

7. Squeeze out the tea bag into the bowl with the fruit and add to the egg, butter & sugar batter above

8. Now add the flour mix to the batter

9. Finally, add the yogurt into the mix

10. Spoon the batter mix into your baking tin

11. Place into an oven at 170 degrees fan (electric) for 45 mins

12. Remove and leave to cool

13. Cut a slice and serve with an extra dollop of yogurt and make yourself a delicious Tick Tock cuppa

14. Take them all over to an armchair, sit down and go ‘Arrrrh’
