Onion Bhajis & Cucumber Raita - Tims Dairy

What you’ll need:

  • 260g gram flour
  • ¼ tsp bicarbonate of soda
  • 1 1/2 tsp ground cumin
  • 1 ½ tsp ground coriander
  • ¼ tsp chilli powder
  • ½ garlic clove, finely grated
  • Salt & black pepper
  • 4 onions, roughly chopped
  • 300ml warm water
  • Vegetable oil, to fry
  • 500g Tims Dairy Greek-style Natural yogurt 
  • 1 cucumber, coarsely grated and the water wrung out of it using a tea towel

How to do it:

  1. Fill a wok/pan a third of the way full and set over a medium heat
  2. Combine all the ingredients for the bhajis bar the onions in a large bowl
  3. Add the onions to the batter mix and stir. Once the oil is hot, take tablespoonfuls of bhaji mixture and place them in the hot oil
  4. Fry for 2 minutes, turn over, and then fry for another 3 minutes. You want them to be golden brown
  5. Remove the bhajis using a slotted spoon and place them on a plate lined with kitchen towel to absorb any excess grease
  6. Make the raita by combining the yogurt with the cucumber and a generous sprinkling of salt and pepper
