Not only simple, these are very quick to make and hugely gratifying. Far nicer than buying them ready-made!
Makes about 12.
Put the yogurt, flour, salt and baking powder into a food processor and mix into a dough. If the dough is dry add a little water, if wet, add a little more flour until it forms a workable dough ball. On a floured surface divide the dough into 12 pieces and roll each into a small ball. Roll each one out as a thin round and layer them with a sheet of greaseproof paper in-between each one. Put a heavy based pan on a high heat, once it is very hot cook each flatbread for a couple of minutes on each side – they should begin to get a good brown colour and to puff a little. Keep the flatbreads warm in an oven until ready to serve with your dip of choice or as a healthy wrap.
