Caramelised Banana Pancakes

Piled high and shared, these are an absolute crowd pleaser. The combination of fluffy pancakes with yogurt, chocolate chips and caramelised bananas is heavenly. ⠀

Ingredients:

Caramelised Bananas.

Method.
Place all of the batter ingredients in a bullet or blender and whizz! ⠀
Place a small amount of butter into a frying pan. When melted spoon 2 or 3 tablespoons of batter onto a frying pan. Cook until the surface of pancakes creates bubbles, about 1 minute. Flip carefully with a spatula, and cook until golden on the underside, 1 to 2 minutes more.⠀
For the bananas, heat the sugar over a moderate heat for a couple of minutes and stir with a wooden spoon. As it begins to melt stir in the butter. Remove from the heat and stir in a couple of tablespoons of water to stop it cooking anymore. Add the bananas, return to the heat, and gently caramelise on each side until golden and syrupy.
Serve the pancakes and bananas with a large spoonful of our yogurt and sprinkle some chocolate chips over the top for good measure. Yum!⠀
