Winter Coleslaw
For healthy eating through the winter months there is no better than a fresh, crispy, seasonal coleslaw. Perfect for the festive period.

For the dressing:
Method:
Mix all of the salad ingredients in a large bowl. Prepare the dressing by whisking all the ingredients in a separate bowl, then fold into the coleslaw. Test for seasoning then refrigerate until you are ready to serve it.
To Serve:
Perfect on top of jacket potatoes, or served alongside roast gammon and turkey leftovers (especially for boxing day).
