Serves 4.


  • 1/4 of a medium red cabbage, finely shredded
  • 1/4 of a white cabbage, finely shredded
  • 1 large carrot, grated
  • 1 large eating apple, cored and thinly sliced
  • 4 spring onions, finely chopped
  • A handful of fresh parsley, chopped
  • A handful of fresh mint, chopped
  • A handful of toasted walnuts, broken up (optional)

For the dressing:


Mix all of the salad ingredients in a large bowl. Prepare the dressing by whisking all the ingredients in a separate bowl, then fold into the coleslaw. Test for seasoning then refrigerate until you are ready to serve it.

To Serve:

Perfect on top of jacket potatoes, or served alongside roast gammon and turkey leftovers (especially for boxing day).
