Quick, Easy, Deliciously Light Yogurt Tiramisu - Tims Dairy

What you’ll need:

  • A packet of sponge fingers – we’ve used chocolate and vanilla
  • 350g of Greek style Vanilla yogurt
  • 175g mascarpone cheese
  • 1 tsp vanilla essence
  • A cup of strong espresso coffee
  • Cocoa for dusting

How to do it:

Serves 4 – you need 4 dessert dishes

  1. Dip the sponge fingers in the espresso and line the bottom of each dish
  2. Mix the mascarpone, yogurt and vanilla essence until it is a rich thick cream
  3. Layer spoonfuls on top of the sponge fingers
  4. Repeat the process with the sponge fingers and another layer of the cream
  5. Sprinkle with a heavy dusting of dark cocoa – use a heart shape if you can
  6. Serve immediately or leave in the fridge overnight. Bring to room temp for 1 hour before you serve
