Passion Fruit Parfait
For a healthier frozen parfait which will really impress your guests try this very simple recipe. You can substitute the passion fruits for a handful of fresh berries (as pictured) if you prefer.
If this doesn’t get devoured and a big ‘thumbs up’ then nothing can!
Pile the mix into a cling film lined 450g/1lb loaf tin and press down well. When frozen turn out onto a dessert platter and allow to soften slightly before cutting into slices to serve drizzled with passion fruit or mango sauce.
