Middle Eastern Salmon with Jewelled Freekeh - Tims Dairy

“A delicious fish dish topped with Tims Dairy Greek Style Yogurt. Greek yogurt has twice the protein of regular yogurt and is full of probiotics, which can help maintain a healthy gut. It also contains calcium, potassium, zinc and vitamin B6.”

Serves 2.⠀


  • 2 salmon fillets ⠀


For the Freekeh.

  • 250g Cooked Freekeh
  • 2 onions finely chopped ⠀
  • 2 cloves crushed garlic ⠀
  • 12 cherry tomatoes chopped ⠀
  • Chopped coriander ⠀
  • Pomegranate seeds⠀

Yogurt sauce.


Mix the marinade together and coat the fish and season. Leave for 10 mins. ⠀

Sauté the onions until soft, then add the garlic and seasoning for 2 mins. Warm through the Freekeh and add the tomatoes. Keep on a low heat for 5 minutes.⠀

In a preheated oven of 210C, roast the salmon for 10 minutes then rest for 10 minutes in the roasting tin.

Place the salmon on top of a bed of the Freekeh and top with a spoonful of the yogurt sauce and pomegranate seeds.
