Ingredients :

  • 100g Greek Style Kefir natural
  • 50ml olive oil
  • 2 tbsp white wine vinegar
  • 1 good pinch English mustard powder
  • 1 tbsp very finely chopped ¬†onion or shallot
  • 1/2 clove garlic, minced
  • a good pinch smoked paprika
  • 1 tsp honey or maple syrup
  • salt & pepper

Method:

Place the onion or shallot in a bowl with the garlic and the white wine vinegar and a good pinch of salt. Leave to soften for 10-15 minutes. Now add the olive oil, a good grind of pepper and whisk. Follow with all the other ingredients and whisk again. Drizzle over your favourite mixed salad.
