Sometimes it’s ok to cheat if you’re short of time. These Hot Smoked Salmon fillets are delicious and can be incorporated into endless quick lunches and suppers. You’ll find them in most supermarkets. Here we’ve just torn up the salmon and layered it with some leaves, avocado, new potatoes and Quails Eggs. Super quick yet packed with punchy flavour and goodness.⠀

Ingredients:

Dressing (shake together in a jar)⠀

  • 1 tbsp Tims Dairy Greek Style natural yogurt
  • 1 tbsp olive oil⠀
  • 1 tsp Horseradish Sauce⠀
  • Squeeze of lemon to taste⠀
  • Handful of chopped herbs (we used oregano)⠀
  • Salt & Pepper ⠀

2 honey hot smoked salmon fillets

For the Salad⠀

  • Small bag watercress ⠀
  • 1 avocado sliced⠀
  • 6 hard boiled quail eggs halved⠀
  • 2 tsp capers (drained)⠀
  • 1 small shallot finely chopped⠀
  • 5 boiled waxy potatoes (cooked and quartered)

Method:

Arrange the leaves on a plate and top with the potatoes, avocado & eggs.⠀Roughly tear the salmon into chunks and scatter on top. Drizzle with the dressing and enjoy!⠀
