Greek Style Brunch
Fried eggs with Kalamata olive tapenade, tomatoes and Greek style yogurt. The perfect breakfast or brunch.
In a heavy bottomed frying pan add a knob of butter and a drizzle of olive oil and gently fry 2 eggs over a medium heat, until the whites are set but the yolk is still runny.
Cut two slices of thick sourdough and toast, slice the tomatoes thinly. Sprinkle over a healthy splash of good olive oil and seasoning and add on the sliced tomato and one fried egg. On top of the egg add one teaspoon of the Kalamata olive tapenade and one small spoonful of Tims Dairy Greek Style natural yogurt. Serve immediately while still warm.
