Mix the yogurt with the cream cheese, cream, sugar and gently fold until combined.
Take 1/4 cup of the mixture in a small bowl and stir in the vege gel. Add it to the remaining yogurt mixture and gently fold again.
Blitz the shortbread biscuits with the butter until they resemble breadcrumbs.
Add the shortbread and butter mixture at the bottom of a jar or each hole of a mini muffin tin and press with a ladle. Add the yogurt filling on top and refrigerate for 4 hours.
