Serves 6 people

Ingredients

  • 100g pitted dried prunes
  • 100g dried apricots
  • 100g dried figs – hard stalks removed
  • 100g vine fruits – we used a mix of large raisins and sultanas
  • Zest and juice of 1 orange
  • 1 cinnamon stick
  • 4 cloves or 2 star anise

To serve

450g pot Tims Dairy Greek Style Lactose Free Coconut Kefir

Method

  1. Place the dried fruits in a medium sized saucepan and add enough water to just cover the fruits. Bring to the boil and reduce heat to a low simmer for 15 mins, stirring occasionally
  2. Add the orange zest and juice and the spices and top up with more water, if needed
  3. Continue to simmer for a further 10-15 mins or until the fruit feels tender when tested with a skewer
  4. Empty the compote into a shallow serving bowl, cover and allow to cool
  5. Best served chilled with a generous serving of kefir and a sprinkle of granola

Recipe Tip

To serve this as a dinner party dessert, add a splash of Cointreau or Brandy and serve with Tims Dairy Greek Style Vanilla yogurt scattered with chopped toasted hazelnuts.
