Louise of Nordic Kitchen Stories has built a great following with her heritage inspired modern Scandi recipes, which not only taste delicious but are presented beautifully too. Her eye for photography perfectly compliments her gorgeous recipes and this is a lovely, simple picnic dip to enjoy through the summer months.
Cut the cucumber in half lengthways and de-seed using a teaspoon, then coarsely grate.
Put the grated cucumber into a sieve suspended over a bowl, sprinkle with 1/2 tsp of salt and stir with a spoon. Place a plate on top of cucumber and allow cucumber to drain for approximately an hour. With a large spoon press the grated cucumber against the sieve just to get any remaining liquid out.
Place in a bowl and add the yogurt, olive oil, garlic, dill and lemon juice, stir well. Finally add pepper to taste, stir again and serve.
