Dill Tzatziki - Tims Dairy

Ingredients.

150g Tims Dairy Greek style natural yogurt

1/2 Cucumber

1 small bunch dill, finely chopped

A squeeze of lemon

1 tablespoon olive oil

Salt and pepper

1 clove garlic, crushed

Method.

Cut the cucumber in half lengthways and de-seed using a teaspoon, then coarsely grate.

Put the grated cucumber into a sieve suspended over a bowl, sprinkle with 1/2 tsp of salt and stir with a spoon. Place a plate on top of cucumber and allow cucumber to drain for approximately an hour. With a large spoon press the grated cucumber against the sieve just to get any remaining liquid out.

Place in a bowl and add the yogurt, olive oil, garlic, dill and lemon juice, stir well. Finally add pepper to taste, stir again and serve.
