This Coronation Chicken has had a Simply Nutritious Delicious makeover. The usually mayonnaise laden retro dish has been lightened with Greek style yogurt and given some fresh punch with green chilli.
Serves 4 as a main 8 as a canapé.
- 4 cooked Chicken breasts skin removed and torn into chunks
- 4 mini gem lettuces dismantled (if you are serving as a canapé)
- 3 tablespoons Tims Dairy Greek Style Natural Yogurt
- 1 tablespoon Mayonnaise
- Juice 1/2 lemon
- 1 banana shallot finely chopped
- 1 green chilli finely chopped
- 1/2 teaspoon turmeric
- 2 teaspoons medium curry powder
- 1 handful sultanas
- 1 handful chopped apricots
- Salt / pepper
- Toasted flaked almonds to finish
Mix the sauce ingredients in a large bowl. Stir in the chicken. Spoon into little lettuce cups. Sprinkle with Flaked Almonds and share amongst friends and family.
