• 1 tbsp extra-virgin olive oil
  • ½ white onion, diced
  • 1 bay leaf
  • 2 tsps mild curry powder
  • 1 tsp tomato paste
  • 60 ml red wine
  • 60ml water
  • 100g mayonnaise
  • 100g Greek Style Natural Yogurt
  • 1 tbsp dried apricots, finely chopped
  • 1 cup chicken, diced
  • Salt & pepper to taste



In a saucepan, lightly fry the onions in the olive oil for 2 minutes.

Next add the curry powder, bay leaf and tomato puree and cook for another 2 minutes.

Then add the wine and water and reduce for 3-5 minutes.

Strain the contents of the frying pan into a mixing bowl and add your mayonnaise, yogurt, apricots and chicken and mix together.

Finally add salt and pepper to taste, and enjoy in a sandwich, or with toast or pitta breads or even on its own!
