Coconut Kefir Overnight Oats with a Berry Swirl
This heavenly breakfast idea from @nordickitchenstories brings excitement to waking up in the morning having prepared your healthy, delicious breakfast the night before – well mostly!
Begin by placing the oats in a bowl with the Kefir and milk, stir until smooth. Add the seeds and nuts and stir again. Cover and place in the fridge for at least 3 hours or better still overnight.
Defrost the berries. Blitz in a blender until smooth (if you don’t like the seeds just pass through a fine sieve), add honey to your taste. Place the overnight oats in 2 bowls, pour over the berry puree and swirl with a spoon. Top with whole berries, nuts and seeds if desired. Serve and devour.Print
