Serves 4.


  • 1 tbsp olive oil
  • 1 white onion, finely chopped
  • 2 garlic cloves crushed
  • 400g carrots chopped
  • 400g sweet potato peeled and chopped
  • a knob of fresh ginger peeled and grated
  • 1/2 tsp chilli powder
  • 1 litre vegetable stock
  • salt & pepper
  • Tims Dairy Greek Style Natural yogurt and freshly chopped chives to serve


Sauté the onion in the oil for several minutes until soft. Add the garlic, carrots, sweet potato, ginger and
chilli powder. Stir in the pan for a few minutes then pour in the vegetable stock. Season and simmer for about 15-20 minutes until soft and tender. Blitz in a food processor then serve with a generous dollop of natural yogurt and some freshly chopped chives.
