Caffè Latte Cheesecake - Tims Dairy

Serves 4-6 

What you’ll need:

  • 175g crushed Bourbon biscuits
  • 50g unsalted butter, melted
  • 400g full fat soft cheese
  • 50g icing sugar
  • 1 tsp vanilla paste
  • 200ml double cream
  • 225g Caffè Latte Greek Style yogurt

For the decoration:

  • Cocoa powder for dusting, chocolate sprinkles or crumbled chocolate flake for sprinkling

How to do it:

  1. Place the crushed biscuits and melted butter in a mixing bowl and combine well until all the crumbs are coated
  2. Take a 20cm springform tin, base lined with baking baking and tip in the biscuit mixture. Press down firmly with the back of a spoon to create a flat layer. Chill in the fridge while you do the next step
  3. Put the soft cheese, icing sugar and vanilla in a bowl and beat briefly with electric beaters to loosen. Add the double cream, a quarter at a time, allowing the mixture to thicken as you beat – it should be thick enough by the end that you have to shake a spoon to release it
  4. Pile the cheesecake mixture onto the biscuit base, smooth the top then chill until firm
  5. Top with swirls of Caffè  Latte Greek style yogurt and decoarate with your chocolate sprinkle of choice
  6. Slice into wedges and serve with an espresso on the side for an extra coffee hit!

 Recipe Tip

This cheesecake also works well topped with any of our Tims Dairy Greek style yogurts – try using Honey with roasted apricots and toasted flaked almonds for the real taste of sunny Greece!
