A thoroughly satisfying salad loaded with goodies. We’ve made it a little healthier by substituting the majority of the mayonnaise with Greek Yogurt.⠀

Serves 2.

Ingredients:

  • 1 cos lettuce, or romaine sliced into mouthful sized bites⠀
  • 2 cooked chicken breasts cut into slices (still warm)⠀
  • 4 strips streaky bacon⠀
  • A small tin anchovy fillets (2 finely chopped to almost a paste for the dressing)⠀
  • sea salt⠀
  • 2 slices of leftover bread (preferably sourdough) for croutons. You could also use shop bought.⠀
  • A few shaved pieces of Parmesan.⠀

Dressing ⠀

  • 75g Tims Dairy Greek Style Natural yogurt 
  • 1/2 tbsp of mayonnaise ⠀
  • 2 tbsps olive oil⠀
  • a handful of Parmesan cheese⠀
  • 2 teaspoons Worcestershire sauce⠀
  • juice of ½ a lemon⠀
  • 1 clove crushed garlic ⠀
  • black pepper⠀

Method:

Combine the dressing ingredients including the 2 finely chopped anchovy fillets in a bowl.⠀

Fry the bacon until crisp. Slice the bread into large squares and in the same pan, sauté until golden using a little more olive oil. Drain on some kitchen towel. Toss everything together in a large bowl and serve with extra shaved Parmesan.
