Makes 20-22 cups

Ingredients.

  • 150g rolled oats
  • 1 small banana or (approx. 75g mashed)
  • 15g desiccated coconut
  • 15g coconut oil
  • a good pinch sea salt
  • 65g runny honey
  • 15g nut butter of your choice
  • 30g chopped almonds
  • 15g sunflower seeds
  • A selection of summer berries
  • Tims Dairy Greek style fruit or natural yogurt

Method.

Preheat the oven 170C fan.

Begin by mashing the banana in a bowl. Add the honey, coconut oil and nut butter, stir to combine. Now add the oats, salt, nuts, desiccated coconut, sunflower seeds and give it a good stir until it’s evenly mixed.

Lightly grease a mini muffin tin with sunflower oil. Place a heaped teaspoon of the granola mixture into the muffin moulds. Press down with the back of a teaspoon or your fingers to create a cup.

Bake for 18-20 minutes or until set and golden in colour. Cool completely before filling with delicious thick and creamy Tims Dairy yogurt and top with summer berries.
