Serves 4-6 (depending on size of ramekins).
- Extra white chocolate or fresh fruits
Mix together the biscuit crumbs and butter then press into the bottom of 6 medium sized ramekins. Place in the fridge to chill. Beat the soft cheese in a bowl with a fork to soften, then gradually blend in the yogurt.
In a second larger bowl, carefully melt the white chocolate in the microwave or over a pan of simmering hot water. Gradually fold in the soft cheese and yogurt mixture until the mixture is thick, smooth and glossy. Spoon the cheesecake mixture onto the biscuit bases (for a really neat finish use a piping bag) and refrigerate for at least 3 hours.
Simply serve with grated white chocolate or a handful of fresh fruits.
These cheesecakes are perfect to share with your loved one on Valentine’s Day by using heart shape moulds rather than ramekins. Once they are set firm, turn out onto a plate and decorate with berries and a dusting of icing sugar.
