Tzatziki - minty cucumber and yogurt dip

Delicious as a dip, as an accompaniment to salads and burgers or on warm pitta bread as a snack.
- 350g Tims Dairy Greek style natural yogurt
- 1 cucumber
- 2 tbsp lemon juice
- 2 cloves of garlic, grated finely
- 1 tsp finely chopped fresh mint
- Salt & pepper to taste
- Olive oil to drizzle over the top
Peel, de-seed and chop the cucumber into small chunks. Combine the yogurt, cucumber, chopped mint, lemon juice and garlic. Add a dash of olive oil and season with salt and pepper.
