Toasted Quinoa Granola
Healthy, hearty and super tasty. Enjoy this gluten free version of granola with yogurt and fruit compote.
Heat oven to 190C fan. Line a baking tray with parchment.
Gently heat your syrup in a pan and then stir in the other ingredients. NB: you can use other seeds and nuts too if you want to change this recipe slightly. Spread the mixture evenly over the parchment and put in the oven for 30 – 4o mins, checking regularly as cooking times may vary. Once it is has an even golden brown colour remove, cool it and then break it up and store in an airtight container – if you can wait that long!
For the compote, put all the ingredients in a pan and gently heat through until the sugar is thoroughly dissolve and the fruit starts to break down. Stir regularly and add a drop of water if you think necessary. Once it has a jam like consistency with bits of fruit in, cool and store in a jar.
Put a generous serving of any one of our Greek style yogurts in a bowl, top with the fruit compote and a generous serving of the granola. A very healthy start to the day and a great snack at any time of the day.Print
