Also – try Apple, Sultana and Cinnamon with Honey Greek style yogurt or Banana and Blueberry with Natural Greek style yogurt…delicious!

Serves 4.

Ingredients:

  • 150g SR flour
  • ½ tsp bicarbonate of soda
  • 175g Tims Dairy Greek Style yogurt with vanilla
  • 1 medium sized egg
  • 1 apple, grated
  • 100g fresh blueberries & strawberries
  • 1-2 tbsp sunflower oil
  • 1-2 tbsp clear honey or golden syrup

Method:

Mix the flour and bicarbonate of soda in a bowl. Make a well in the centre, then gradually beat in the egg and half the pot of yogurt (keeping the rest for serving) mixed with 100g cold water. Stir until a smooth batter is formed. Stir in the grated apple and half of the berries.

Brush a heavy based frying pan with a little oil and drop large spoonfuls into the pan to make 5-6cm pancakes. Cook over a medium heat for 1-2 minutes each side until golden and cooked through. Transfer to a warmed serving plate and repeat with the remaining oil and batter.

Stack 3 pancakes on each plate and top with a spoonful of the remaining yogurt, some berries and a drizzle of honey.

Any leftover pancakes will still taste great the next day – just warm them through in the microwave or a dry frying pan before serving
